So Good, They Don’t Seem Paleo

Almond Joy Lara Bars

Ingredients
- 2/3cup Medjool dates(pitted, coarsely chopped)
- 1/4cup Almonds(unsalted)
- 2tbsp Dark chocolate chips
- 2tbsp Unsweetened shredded coconut
- 1tsp Vanilla extract
Instructions
Using a food processor or high powered blender, add the date, almonds, chocolate chips, and shredded coconut. Process until beginning to break down. Add the vanilla. Process another 2-3 minutes. Line a square baking dish with parchment paper, on the bottom and all four sides. Transfer the date mixture prepared baking dish. Using your hands or a rubber spatula, spread the dough until in an even, flat layer. Cover with another piece of parchment paper. Refrigerate at least 1 hour. Cut into squares. Store in an airtight container and between parchment paper, so they don’t stick.
